Szechuan "Saliva" Chicken 四川口水鸡

口水鸡 translate into "saliva chicken", literally. Sounds gross I know, but the "saliva" here basically just means it's so delicious that it'll make you salivate. In other words, "mouth-watering" chicken may be a more appropriate translation.

Szechuan "Saliva" Chicken 四川口水鸡

It is a popular Szechuan cold dish made with poached chicken drenched in spicy and aromatic sauce. I'm not a fan of cold dishes, so instead of chilling the chicken in the fridge, I just left it out at room temperature, covered of course, while preparing the sauce.

Yield: serves 4-6


Ingredients:
A:
  • 1 whole chicken (about 1.5 kg) - chopped into half
  • 1 stalk spring onion
  • 6 slices ginger
  • 1 tbs Shaoxing wine
  • 2 L water
B:
  • 2 tbs oil
  • 1 1/2 tbs chili oil flakes
C:
  • 1 stalk spring onion - diced
  • 2 stalks coriander - diced
  • 1 tsp grated ginger
  • 3 cloves garlic - grated
  • 2 tsp Sichuan peppercorn
D:
  • 2 tsp black vinegar
  • 1 tsp sugar
  • 1 tbs light soy sauce
  • 1 tbs Shaoxing wine
  • 1/2 cup chicken stock
  • Salt
E:
  • 1 tsp sesame oil
  • 1 bunch coriander leaves

Directions:
  • Place all "A" ingredients except the chicken in a large pot (enough to fit one whole chicken). Bring water to boil.
  • When the water boils, put the chicken in breast-side down. Bring to boil. When the water boils again, lower heat and simmer for 10 mins, covered.
  • Switch-off heat, let chicken sit in the water for about 30 mins, covered.
  • Remove the chicken and soak it in ice cold water for about 10 mins. Chop the chicken into smaller pieces and leave chicken aside or chill in the fridge for later use.
  • Heat up "B" ingredients.
  • Add "C" and fry until fragrant.
  • Add "D", bring to boil. Season to taste.
  • Pour the sauce over chopped chicken.
  • Drizzle sesame oil over chicken.
  • Garnish with coriander leaves.
