Cactus is an excellent source of healthy fiber, great antioxidant and is beneficial to the body's digestive system. And I always thought it's just a green sponge.
Never knew it could be eaten and could be quite delicious too! Smells like ginseng chicken soup when it's simmering but tastes somewhat "fresh" - like cucumber? It is hard to describe the flavour, you just have to try it out yourself.
Cactus Soup with Chicken (仙人掌煲鸡汤)

Yield: serves 4-6
Ingredients:
- 1 whole (about 1 kg) chicken - halved or chopped into pieces
- 850 g cactus - cleaned and cut into pieces
- 2 honey dates
- 15 red dates - de-seeded
- 2 L water
- Salt to taste
Directions:
- Blanch chicken. [Place chicken into a large pot, add enough water to cover. Bring to boil. Once water comes to a boil, remove from heat, drain and wash.]
- Place all ingredients in a pot. Bring to boil then reduce heat to simmer for at least 2 hours covered.
- Add salt to taste.
