Myulchi Bokkeum (Stir-fried Anchovies)

I cannot tell you how much I love Korean food. Most of the dishes are spicy (hence my love), so well seasoned, so appetising. Myulchi (or myeolchi) bokkeum is one of the many Korean banchan (side dishes) commonly served with plain white rice. Myulchi is dried anchovy in Korean, bokkeum as you might have guessed refers to stir-fried dishes. As far as I know, there are two variations of myulchi bokkeum, one of which is soy sauce-based and the other being hot pepper paste-based.

This is of course the spicy version. Spicy food is ever so much more appealing to me. This is salty, spicy, sweet and sticky, extremely addictive. So yummy I made a huge batch to snack on. So be warned and make more while you are at it.

  • 1 cup (about 55 g) dried baby anchovies
  • 1 tbs vegetable oil
  • 1 tbs brown sugar
  • 1/2 tsp minced garlic
  • 1 tbs gochujang (Korean hot pepper paste)
  • 1/2 tbs honey
  • 4 tsp water
  • 1 tsp sesame oil
  • 1 tbs toasted sesame seeds

  • Heat oil in pan.
  • Add anchovies and stir fry for about a min (longer if you rinsed the anchovies beforehand) or until browned and lightly crispy. Remove from pan and set aside for later use.
  • In a bowl, combine the garlic, gochujang, honey, sugar and water, stir until combined.
  • Pour sauce mixture into pan and cook on low heat until shiny and thickened a little.
  • Add anchovies to the spicy sauce and toss to coat.
  • Remove from heat, stir in sesame oil and sesame seeds.
  • This can be kept refrigerated for up to 2 weeks. Just let the sticky anchovies soften at room temperature for awhile before serving.
