KFC Fried Rice - Finger Lickin' Good

Here's another creation using leftover KFC. This time it's the chicken! We don't usually have leftover KFC chicken but sometimes the wild boar goes overboard and orders like he has a litter of pigs to feed at home. For the 3 of us (bear in mind that my sister eats like a mouse), he ordered a family feast with 8 pieces of Original Recipe chicken, 4 fries, a pot of gravy, coleslaw, and a bottle of Pepsi. And on the side, 6 pieces of hot wings!

Reheating leftover KFC chicken the next day is just not the same as freshly fried ones, so we usually shred it and use for fried rice, or sometimes chicken pie. The spices of the chicken adds a really nice flavour to the dish. What's KFC without tomato ketchup heh, so I used ketchup to flavour the rice.

Ingredients: serves 4
  • 3 rice cups (1 rice cup=180ml) uncooked rice
  • 1 large onion - diced
  • 3 cups mix vegetables
  • 3-4 pieces KFC fried chicken(large pieces, preferably breast/ thigh) - shredded
  • 2 eggs - lightly beaten
  • 1 tbs sesame oil
  • ~1/4 cup Lingham's chili sauce/ hot sauce
  • ~1/4 cup tomato ketchup
  • Oyster sauce
  • 1 tsp white pepper powder
Directions:
  • The day before, cook rice and leave to cool. Chill overnight in the fridge. Or early on the day, cook rice and leave to cool.
  • Heat up a bit of oil in a pan.
  • Add onions, cook until soft and translucent.
  • Add mix vegetables, cook until softened.
  • Mix in shredded chicken, cook until chicken is warmed through. Leave this aside for later use.
  • Heat up a bit of oil in a large pan.
  • Add eggs.
  • Mix in rice when eggs begin to set.
  • When eggs are cooked, pour in sesame oil, chili sauce, ketchup and white pepper. Mix evenly.
  • Add oyster sauce to taste.
  • Mix in cooked vegetables and chicken.
  • Serve!
