Dried Scallops & Seaweed Soup

Tuesday, 1 September 2009

Happy belated Summer Bank Holiday! Hope you enjoyed the awesome long weekend. Our Bank Holiday was great - went to visit the whtie cliffs of dover, Canterbury cathedral, Broadstairs (a really picturesque coastal town) and of course we had lots and lots of delicious food! Will upload the pictures once I get them sorted out - soon, I promise. Here's a teaser =)

On the way to Dover, the weather was awesome!

For now, a quick and tasty seaweed soup made with Chinese seaweed(?). Seaweed comes in many forms, unlike the thin and green Japanese seaweed you normally see, this kind of seaweed normally comes in a round clump and is very dark in colour, close to black. My grandmother used to cook egg drop soups with this seaweed, anchovies and fish balls. This is actually a very common soup in Chinese families.

  • Dried scallops
  • Dried seaweed
  • Goji berries
  • Salt

  • Place dried scallops and water in a pot, bring to boil.
  • Lower heat and simmer for at least 15 mins.
  • Add goji berries and seaweed, simmer until seaweed is soft (less than a minute).
  • Add salt to taste.
