The Ultimate Comfort Food - Minced Meat & Baked Beans with Rice & A Sunny Side Up!

Tuesday, 28 July 2009

This is my current new found comfort food. I couldn't get the idea of minced meat and baked beans combo out of my mind ever since I saw it somewhere (sorry I forgot which blog) awhile ago. I decided to give it a try one day and WOW it's super tasty and so satisfying! I would highly suggest that you serve this with a sunny side up. The oozing yolk just makes everything better - agree?

What exactly is minced meat? Is it just finely chopped meat? We always thought it was something specific. No matter, good dish here!

"The oozing yolk just makes everything better - agree?"
FREAKING agree!!! I always said that an oozing yolk is the perfect topping for anything savory! I'm not a big fan of rice, but throw a runny egg over it and watch me gobble it up!
I'm saving this recipe! I might use something else other than the rice, but I love the combination of the minced meat and yolk!

Totally agree with you that this is ultimate comfort food. My mum would cook this regularly when we younger and we'll finish off a bowl of rice with this dish. Any left overs would be sandwiched between 2 slices of bread for our school lunch box. This surely brings back fond memories.

Cooked this this afternoon and is surprisingly tasty... just out of curiosity, what measurements of seasoning do you put in?

pigpigscorner said...

Chrystal & Amir: Yes, minced meat is essentially finely chopped meat.

Peter: Sorry, can't give you the exact amount as this is one of those lazy-day dishes. I'm sure I'll be cooking this soon and will get back to you on that!
