It all went wrong...but a happy ending!

It was suppose to be Vietnamese Caramelised Pork which looks like this at My Kitchen Snippets. But a lot of things went wrong during the cooking process and it transformed into another very tasty and delicious dish.

Firstly, the caramelised sugar hardened after I added the pork. Some of the hardened sugar was stuck to the ladle. I stupidly added some water. Not a wise move as the pork slowly released its juices (a lot of it!). It became a stew!

Secondly, I thought bell peppers would go quite well with the dish, and would make the dish more colourful, so I added some. But the pork released an amazing amount of liquid during cooking and by the time I managed to get to the consistency I wanted, the bell peppers disappeared! They became part of the sauce - a very peppery and delicious sauce. I wanted the dish to be more presentable, so I added part of the peppers for the sauce and some of them towards the end when I cooked this the second time. Yes, I
cooked this twice in a week, because it is that good.

Lastly, I couldn't find the green chillies I bought. I thought I left them at the check-out counter, but I found them later that night in the fridge, hidden behind a whole bunch of fruits. Anyway, I added my current favourite sauce Sriracha -
delicious! So here I present my version of caramelised pork in bell pepper sauce.

Ingredients:

  • 3 tbs Sugar
  • 700g Pork - cut into bit size cubes or strips
  • 3 cloves Garlic - minced
  • 3 Bell Peppers (different colours) - diced
  • 1 1/2 tbs Fish Sauce
  • 1/2 tsp Freshly Ground Black Pepper
  • 1 1/2 tbs (or more) Agave Nectar or Honey
  • 1/2 tbs (or more) Sriracha

Directions:

  • Slowly heat up and melt sugar in a clean dry pan. Do this over low heat.
  • Keep stirring as sugar melts until it turns golden brown. Be careful as it burns easily.
  • Add pork, increase heat and stir to coat pork. Sugar will become sticky and harden, but will melt as it cooks.
  • Add garlic, 2/3 of the diced peppers, fish sauce and black pepper. Mix.
  • At this stage, liquid will be released from the meat (a lot of water!), try to mix around and melt any sugar stuck on your ladle.
  • Reduce heat, cover and let it simmer for about 20-30 mins. Stir around every 15 mins. Add a bit of water if the sauce dries up too much. The peppers should be disintegrated after this.
  • Remove cover, increase heat and let the sauce reduce. The sauce should be quite little and thick.
  • Mix in agave nectar/ honey and sriracha to taste.
  • Add in the rest of the bell peppers and cook until tender.
  • Enjoy with rice!

This looks awfully good to me. Sometimes it is fun to turn somthing into another thing. That "thinking on your feet" sort of thing. The ingredients have me thinking how tasty it is.

Very often accident like in the cooking process will create a memorable dish. One famous example, Tarte Tatin! Who knows your dish will be famous too, I am not joking. It looks super delicious. And simple enough to make. YUMMY!

Although it didn't turn out the dish you initially expected, it's final look and taste were satisfied. Not too bad. It's a wonderful stew anyway.

haha this always happens to me when I cook! Everything seems to go wrong and I end up on the verge of a breakdown, but when I calm down and reevaluate everything, it ends up pretty damn great!
