I saw this yummy cookie recipe at Pam's for the love of cooking and bookmarked it without any hesitation as I love white chocolates. When I saw it at Cathy's noble pig, they looked so tempting, I just had to try it. The smell was amazing when baking in the oven and so yummy fresh out of the oven! They were crispy on the outside, moist and chewy on the inside - just how I like my cookies. The wild boar whacked 4 that night!
The macadamia nuts are crucial as they add a wonderful texture to the cookies. For me, I thought the cookies were too sweet because there were so much white chocolate chips in the cookies, I would prefer the dough to be less sweet. But for the wild boar, he thinks it's fine. The cookies turned a bit hard the next day, I wonder why. But they returned to their moist and chewy form after microwaving...yum yum!

Ingredients: makes 16 cookies
Adapted from For the Love of Cooking
- 2 cups Plain Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 3/4 cup (about 160g) Unsalted Butter - melted
- 1 cup Golden Brown Sugar
- 1/2 cup Granulated Sugar
- 1 Egg
- 1 Egg Yolk
- 1 tbs Vanilla Extract
- 1 1/2 cups Macadamia Nuts - chopped
- 1 1/2 cups White Chocolate Chips
Directions:
- Preheat oven to 160°C.
- In a bowl, combine flour, baking soda and salt and set aside.
- In a mixing bowl, beat together the melted butter, brown sugar, white sugar, egg, egg yolk and vanilla until creamy.
- Gradually add flour mixture and mix until well combined.
- Stir in nuts and chocolate chips.
- Drop a spoonful of cookie dough onto baking sheet. I used my favourite ice-cream scoop so the cookies were larger.
- Bake for 12-15 mins until the edges are golden brown. For mine, they were larger, so they took about 17 mins.

I love these biscuits but haven't made them for ages! I think the brown sugar gives them that amazing texture :)
Oh, I wonder if it's so cold that the butter solidified, hence microwaving did the trick? If that's not it, you might consider changing all the sugar to brown sugar or something :) But I do like my cookies soft on the inside too! These look fantastic!

Yum - the only time I really like macadamia nuts is in a biscuit like this; they go so brilliantly with white chocolate.

Every time I go to the store I buy macademia nuts and white chocolate cookies. I absolutely love them.......I will love to make them......but I am not a good baker!!!!
these are the most classic cookies ever...but for some reason, I never get tired of looking at them! I SO prefer white chocolate to regular chocolate chips, though...heh heh! and macadamia rocks! I can move to Hawaii just for the cheap macadamias...

Yes, white chocolate puches things over the edge of sweetness quite quickly! i usually hold back on some sugar when I'm adding white chocolate. I'm glad you man liked them ;) they look lovely, and the macademia must add a great texture, like you say!
