Spinach, Chicken & Chorizo on Whole Wheat Crust

Wednesday, 27 May 2009's that time of the year where we had to defrost our freezer. One of the compartment has more ice than its contents! We can't even close the freezer door at one point because a compartment tray got stuck when we tried to push it in. We had to remove that tray in order to close the freezer door. Ever since then, we've been trying to get rid of all the frozen stuff in order to defrost the freezer. Here's more or less our last batch of stuff to get rid of: half a bag of frozen spinach, some chorizo, a tupperware of frozen chicken...random stuff, so I decided to make a pizza as it's the best way to get rid of random leftovers!

I just figured this is my first pizza post although I've made more than a dozen of them. My pizzas are always fully loaded and mountainous. We love pizzas and always get overexcited and overdo the toppings, so it's always very unsightly but yummilicious. This time, we didn't overdo it and it looked somewhat flat and normal after dressing, so I decided to post it.

This was my first time using spinach as the base, it was really good and according to Jade (our flatmate), it's the best pizza I've made so far. I have to agree as the spinach was really yummy! What can go wrong with chorizo oil, anchovies and garlic right?! It was even better served with chili flakes...yum yum! So here's the recipe for my spinach base pizza. I've been using this dough ever since I found out about it at RecipeGirl's, it's wholewheat, simple and delicious. As for the other toppings, use your favourites or leftovers. I pre-baked the pizza dough because all my toppings were already cooked or half-cooked. If you intend to put fresh or raw stuff like mushrooms, vegetables, raw don't have to pre-bake the crust.

For whole wheat pizza dough:

  • 1 cup Whole Wheat Bread Flour
  • 1 cup Plain Flour
  • 1 1/4 tsp Fast Action Dried Yeast
  • 1 tsp Salt
  • 1/2 tsp Sugar
  • 3/4 cup Warm Water
  • 1 tbs Olive Oil

Pizza toppings:
  • 3 Medium Onions - cut into wedges
  • 1 tbs Brown Sugar
  • 1/2 bag (500g) Frozen Spinach - thawed, drained and squeezed dry
  • 5 tbs Concentrate Tomato Paste
  • 4 Anchovy fillets, in olive oil - minced
  • 3 cloves Garlic - minced
  • 200g Chorizo - sliced
  • 1 1/2 cups Shredded Chicken
  • 1 cup Mozzarella Cheese


For whole wheat pizza dough:
  • Place flour, yeast, salt and sugar in a food processor. Briefly pulse to mix.
  • Combine warm water and olive oil in a cup.
  • Gradually pour liquid into processor while motor is running on low speed.
  • Process until dough forms a ball on the blade and doesn't stick to the walls.
  • Remove dough from food processor and form a ball.
  • Place dough in a lightly greased mixing bowl, cover with clingfilm and let it rest for 30 mins.
  • Shape the dough.
  • Brush a thin layer of olive oil on crust.
  • Bake at 250°C for about 5 mins.
  • Take out the crust, put toppings.

For toppings:
  • For caramelised onions. Heat up oil in pan. Add in onions, a pinch of salt and brown sugar. Lower heat to medium/ low. Stir occasionally. Cook onions until browned. Leave aside for later use.
  • Place chorizo in a heated pan.
  • Fry until oil is released. Chorizos don't have to be fully cooked.
  • Remove chorizo from pan, place aside for later use.
  • Leave about 1 tbs of oil in pan.
  • Add garlic and fry until fragrant.
  • Stir in tomato paste and fry until fragrant.
  • Add drained spinach and anchovies.
  • Mix to combine. Add a few tablespoons of water if too dry. It should be moist but not wet.
  • Add salt to taste or just leave if your other toppings are well seasoned.
  • Spread spinach onto crust, followed by caramelised onions, shredded chicken, chorizo and lastly the cheese.

  • Continue baking for a further 10-15 mins or until cheese is melted and crust is browned.
  • Cut and serve with some chili flakes!

mmmm... nice spanish chorizo. I have mocilla sitting in my fridge. My bf used the last of the mexican chorizo on a potato hash, but the spanish one can be totally cut and served as such.

I'm think really spanish-- spinach but garbanzo's too!

Very scrumptious indeed! I have not blogged about homemade pizzas too! I use Jamie Olive's dough by hand. I love thin crust, usually we will keep making several in one evening with friends so it's like a pizza buffet and the friends can create own toppings and then share. I have realised too that less is more in terms of topping.
I have 2 small pizza doughs in the freezer, good idea to make pizza tonight. Have you tried using buffalo mozzerella cheese, taste very Italian!
