I finally had my first taste of quinoa! I came across countless quinoa recipes for the past few months and after seeing Kevin's quinoa salad with roasted vegetables and Rita's quinoa, asparagus and shitake salad, I thought it is time to give this superfood a try.
It has a mild nutty flavour and a slight bite to the grains when you eat it. Quinoa is gluten free and has all the essential proteins. It is very heatlhy and versatile, I can foresee countless quinoa recipes appearing here in the near future!

Ingredients: serves 2 as mains
Seasonings:
- 1 cup Quinoa
- 1 1/2 cup Chicken Stock (low-sodium)
- 100g Chorizo - sliced
- 1 large Onion - sliced
- 3 Garlic Cloves - pressed
- 150g Mushrooms - sliced
- 1 1/3 cup Frozen Green Peas
- 1/2 Lemon's Juice
- Salt
- Sugar
- Black Pepper
Directions:
- Place quinoa and stock in a pot. Leave to simmer until all the liquid is absorbed.
- Fry sliced chorizo in a heated pan until browned and oil is released.
- Mix in onions and fry until translucent and soft.
- Add garlic cloves and fry until fragrant.
- Squeeze in a bit of lemon juice to deglaze pan.
- Add mushrooms and green peas. Leave to cook.
- When mushrooms are soft and peas are warmed through, mix in quinoa.
- Add seasonings to taste.

I too have seen countless recipes for quinoa. I searched for it for a long time with no results. When I would ask in the stores, they would say "what? say that again? No, never heard of it." All very disappointing.
Then one day much later in Fresh Market I found a bag and purchased it. As luck would have it I couldn't remember where I had seen all of those recipes. So......thanks to you I have a terrific recipe and I can get that bag out of the cupboard. Thanks.

I have to give quinoa another try. I've only had it once, oatmeal-style, and wasn't a huge fan. But I imagine serving it with flavorful veggies is a much better way to go. Thanks for sharing!
